Sarah is a vibrant and elegantly crafted bottle fermented sparkling wine, made in the traditional bottle-fermented method. A unique blend of Chardonnay, Pinot Noir, and Chenin Blanc, it combines the structure of classic Méthode Cap Classique varieties with the freshness and aromatic lift of Chenin Blanc. Named after the owners' second daughter, Sarah, this wine is a tribute to her sparkling personality and joyful spirit. Each grape component is harvested and fermented separately to preserve individual characteristics. The first grapes the cellar receive during the harvest period are used to create Sarah “Bubbly by Nature”. The grapes are whole bunched pressed on a bubbly cycle for about three hours. After the first fermentation, a blend is created, balancing structure and vibrancy. Second fermentation takes place in the bottle on the lees for 8 months. Finally, it is disgorged to retain fresh, zesty flavours.
Vrede en Lust was founded in 1688 by a Flemish Merchant called Jacques de Savoye. The Governor of the Cape allocated this farm to De Savoye, who fled Europe with his wife, Marie-Madeleine le Clerq, due to religious persecution. After 70 days at sea, they arrived in Table Bay on 26 April 1688 on the 160ft Oosterland. He called his farm Vrede en Lust (Peace and Delight/Eagerness), nurturing visions of a rural paradise where he could spend his last days. He immediately started improving the 55 Ha of land that starts at the Bergrivier valley floor and runs up the eastern foothills of the majestic Simonsberg Mountain. In 1996, when the Buys family became the 17th owners, they embarked on a programme of renewal to fully realise the exceptional winemaking potential of the land. Today this breathtakingly modern wine farm, a family owned and managed wine business, is a tribute to its noble roots and continues to build on over 335 years of history and heritage.
